Find this food truck and enjoy their food. I had coconut chicken salad with a fried egg for lunch and my whole being is singing with delight. The salad was loaded with different greens, veggies and chicken and each bite was delicious.
Everything I've had has been super delicious. My whole family loves the food and we have two teenagers who, to put it politely, are tough customers who never agree on anything. Bellingham is the town of subdued excitement and I would describe the food scene as subdued with very little to get excited about. Outpost eats is literally an oasis in a food desert. We've had a total of 12 meals from the Outpost Eats food truck - twice at Wander Brewing Co and twice at Transition - and every meal has been great. We LOVE the vegetarian/vegan options. The menu is excellent at pointing out what you need to do to make a meal vegan if you want. (We're not vegan, just vegetarian, but it's reassuring to know that they understand what these words mean.)
