Based on reviews, Outpost Eats Food Truck Samish is a favorite place in Bellingham, known for most amazing fried rice and very unique flavors. The food is incredibly fresh and delicious, with generous portions and great flavors. Popular meals include the caramel pork and kimchi quesadilla, which is one of the best meals with SO many layers of flavor, and the vegan/vegetarian Loco Moco and vegan Ginger Fried Rice. The pork and kimchi quesadillas are also highly recommended, especially with the optional ranch dipping sauce and pickled onions. A warning: “Make it spicy” is not for the weak. The service is super-fast, and the staff is very good people. Outpost Eats also caters events, showing up early and timing prepping perfectly. They catered a wedding with just over 200 guests, and there was more than enough food. The only downside is sometimes the truck is not there. There is an outdoor and indoor seating area in the building next to the food truck.
