We had a few fabulous meals, delicious and spectacular! Pork vindaloo marinated in tamarind vinegar, fish and farm-chicken xacuti, crunchy colourful vegetables stewed in coconut milk, and more. Even a mundane ingredient like yellow pumpkin, cooked simply in earthen vessels, tasted complex and exotic. If you ever offer cooking classes, i'd love to learn the basics!
