Kathakali serves the most authentic Kerala food I have enjoyed outside of Kerala.

The Kannur Kal Appam, paired with its lightly sweetened cardamom-infused coconut milk, instantly transported me back to my visits to God's Own Country nearly four decades ago. It was one of those rare dishes that evokes memories as much as flavors.
