C Davis BBQ is a Texas style BBQ pop-up food truck, a take-out establishment operating from a huge trailer. The atmosphere is the great outdoors. The food is consistently some of the best BBQ around, hands down the best many have ever had in Washington, with a reputation that matches the quality. The smoked meats are just the best, top notch, nice and flavorful, and very tender. Specific items include meaty pork baby back ribs and beef ribs, which are smoked to perfect doneness, not dry, and are a melt in the mouth type where no sauce is needed. The turkey leg is like turkey ham. The brisket, which comes chopped, makes perhaps the best brisket sandwich ever. Other menu items include tri tip, mac n cheese, potato salad, waffle fries, and red beans & rice, which is a favorite side. The banana pudding is also rumored to be incredible.
The team works extremely hard, is extremely generous and kind, and donates leftover food to help the local community. Customers walk away from the trailer feeling thankful for the experience. It is important to check social media posts for location, be on time, and be prepared to get in line, as they sell out of hundreds of pounds of meat very quickly at events. The food is well worth it and definitely worth the price.
