The chicken paitan broth is the best broth - maybe liquid - I’ve ever tasted. The house-made noodles are perfection. I think this is the best ramen in Seattle, and, after more than a dozen visits, the food is consistently delicious. It’s quick service with gourmet flavors and complexity - a complete delight that will make your day better!
The ramen had a delightful balance of light and rich flavors, and the noodles were enjoyable. The pork had a superb texture, which I appreciated. However, I must give the service only 2 stars. As someone who also works in the service industry, I noticed that although there were several staff members present, no one made an effort to check on the customers at their tables. Delicious ramen and they could sub gf noodles to other ramen. Saved half so I could eat it for dinner but when I got home I discovered they only packed the noodles and threw away the broth. Dude you can't be doing that in the economy! I'll for sure go back but was sad I paid for only half a meal. RIP vegan broth.
