Oink Capitol Hill is a hidden gem serving some of the best Ramen in the state. The Mala Kotteri is a flavor bomb with rich black garlic and a numbing spice option. The ramen egg is exceptional, and the toppings are always great. Prices have increased, but it's still worth returning. The tiny shop can be busy, with waits of 10-15 minutes for a table. However, the food is great and the service is quick. The broth is perfection, with a silken texture and deep flavor, solid like ramen jello. The mala ramen is flavorful, though maybe a tad oily. The fried chicken is easily the best thing, huge, piping hot, crispy exterior, really juicy meat. The shoyu ramen is pretty tasty in terms of textures and flavors. It's a solid spot for ramen.
