We had an awesome first experience here a year ago, the only dining in Seattle we've found comparable to the quality in bigger cities, but unfortunately our second (eagerly anticipated) trip back about 6 months ago was a disappointment. As another reviewer mentioned, something seems to have happened and chef now has an extremely - and I do mean extremely - salt centric palate.
This was my first time at Violet. Service was excellent. The waiter recommended the fish so strongly that my expectations were exceptionally high, but it didn't disappoint. It was a steelhead filet cooked and seasoned to perfection, with extra crispy skin, yet not overcooked. It came with brown butter cauliflower cut in small pieces so they looked like a grain, but they weren't mushy at all and had such a rich flavor that I initially thought I was eating bits of artichoke...
Words cannot describe Violet! To get greeted by your name upon arrival, to the owner talking to each table, to the amazing service and the FOOD!!! The only thing I regret is not trying Violet sooner!
