Really enjoyed a custom made vegan burrito with brown rice, tofu and potato to take back to my hotel room. Service was fast and friendly, and the burrito was very reasonably priced at just $10. Will definitely be back when next in Spokane.
Tasty build your own burrito joint with a bar in the back called baby bar. Almost all their sauces are vegan I believe, and they have plenty of veg options to add to your burrito including tofu. Pineapple salsa and peanut Thai sauce are delicious.

This place is dope!!! Ingredients and service is too notch. Can't say exactly what I got because I just asked the guy what he would make himself but it was a burrito with chicken, curry, pickled veg, super dank!
