Love this little gem! I got the ham and gruyere croissant, brioche loaf, two mini cheesecakes (dulce de leche and raspberry), the sweetened condensed milk pie, and a pistachio puff pastry.
I immediately started inhaling the brioche! It is so soft, buttery, lightly sweet. The croissant is huge and such a good value. The cheesecakes, mini pie, and puff pastry are top notch.
You can really tell high quality ingredients, care, and craft are put into these baked goods.

HeartBaker Bakery is a gem in Huntsville and Madison. Everything tried is delicious, with high quality ingredients, care, and craft clearly put into the baked goods. The ham and gruyere croissant is huge and such a good value. The brioche loaf is soft, buttery, and lightly sweet. The mini cheesecakes (dulce de leche and raspberry), sweetened condensed milk pie, and pistachio puff pastry are top notch. The condensed milk pie is out-of-this-world good, catching attention immediately. The sourdough is a total delicious hit. The picos, dubai chocolate brownies, cookies, and especially the crème brûlée croissant are delicious. The Dubai Brownie, Brookie, and Chocolate Croissant are all DELICIOUS, sift, chewy, and lucious. The iced latte is incredible, with a legit espresso setup and coffee beans that have great flavors and no acidic burn. The spot is very clean, with lots of pretty light and calming to be at. It has a couple tables and chairs inside, and a couple sets outside. It is a perfect place to stop by before work or errands on the weekend. It is a convenient place to run in, grab some yums, and get on the way.
