The Flying Pig Yaletown offers a mix of Canadian cuisine with both impressive hits and disappointing misses. The restaurant prides itself on showcasing the flavors of British Columbia, and for the most part, it succeeds. Dishes like the Beet & Arugula salad, Bison Carpaccio, and Blackened Steelhead Trout were all praised for their delicious balance of salt and acid, which enhanced the natural flavors of the ingredients. However, the Mushroom Pappardelle was a notable failure, with the mushrooms being served whole and almost raw, rather than sliced and sautéed to bring out their full potential.
