Sol Y Sombra is a restaurant with a new team working hard to provide a great experience for its customers. The melted goat cheese with honey, almonds, and berries, along with the chicken empanada and "mac & cheese," were delicious. The vegetarian paella had too much paprika, which overpowered the vegetable flavors. The staff, including the waiter Julio and chef Cecelia, were attentive and open to feedback. While the service was a bit inconsistent, the cocktails like Anejo Old Fashioned and "Don't Call Me Sherry" were well-made. The Scallop Croquettes and Chorizo Dates were excellent, but the Paella Mixta was just okay. The Brussel Sprouts & Chorizo, Cheese & Ham Croquettes, and Mussels Fisherman Sauce were all delicious options from the lighter poolside menu.

The place is a small, cozy spot tucked away in a resort, which can be a little hard to find but is worth the search. The specialty drinks and food, including dessert, received high praise. The chef, Cecilia, met high standards, especially from a guest with Spanish roots. The restaurant offers great beers and cocktails, making it a nice location for casual dining.

Recent visitors praised the delicious paella with perfect chorizo, shrimp, and fish, as well as the awesome cheesecake and chocolate cake. Service with Daniel was noted as wonderful, and many look forward to returning. Despite some mixed experiences, the overall impression is positive, with good prices and nicely crafted cocktails. The ambience was described as somewhat lacking, but the friendly staff and tasty food made up for it, providing a pleasant place for tapas and drinks.

Service was top notch. The Tapas was phenomenal. Ordered the paella it was awesome! There were 6 of us and we got the paella for 4 and with the tapas we got it was more than enough... great wine selection, and we all split a bunuel for dessert that had V a crabs and a raspberry sauce that was out of this world.... the decor was also amazing, the vibe was casual but intimate...200% recommend

A great new culinary gem hidden within the Paloma hotel. Both inside dining in the historic adobe house and outdoor dining by the pool. Great tapas and paella for two. We’ll be back!
