Theory Coffee Roasters is a fantastic spot in Mount Shasta. They serve great coffee, delicious chai, and amazing pastries. The vibe is fantastic, with a beautiful space and delightful staff. They offer oat milk drinks and have a modern atmosphere that doubles as a 'living room' for guests at the Summit Lofts Boutique Hotel. While they may not have dairy-free or gluten-free pastries, the overall experience is wonderful, especially thanks to the friendly pastry maker.
