Kuma on Valencia is a gem of a restaurant that serves excellent sushi. The chef's choice nigiri is a standout, and the house salad is also superb. Chef/owner Ryo Sakai is carefully observing guests' pleasure and suggesting next courses. The nigiri omakase is nicely dressed, and the house-made ponzu and pickled jalapeño are a highlight. The fish has been fresh, generous, and really good. The toro handroll is decadent, and the rolls are delicious. The Zeitgeist roll with toro, eggplant tempura, and purple rice is a work of art. The restaurant offers a comfortable and low-key vibe, with a small but modern space suitable for small groups. The sake menu is awesome, and the staff is genuinely kind. This is a temple dedicated to the profound simplicity of a perfect slice of fish over impeccably seasoned rice. The head master's skill is legendary—every piece is a masterclass in tradition and flavor.
