Perhaps the best new restaurant in Aspen in quite a while. The Onion Soup was absolutely amazing with deep flavor and prepared to perfection and I ordered the chicken palliard because I wanted a simple dish and it was excellent. The server, Kate, was excellent and pricing was a bit lower than the Aspen norm. I highly recommend checking it out.
Overall, a disappointing experience. The restaurant seemed understaffed, and although our server was friendly, service was slow. The fries arrived cold, and the Big Mec burger was overwhelmed by its bordelaise sauce, which completely overpowered the flavor. On a positive note, the French Negroni was very tasty. Unfortunately, the food and service fell well short of expectations.
It was nice to rediscover Petit Trois. The food was delicious; very comfortable and cozy, service solid. Nice location - still in Aspen, but not right in the middle of town - so had a nice intimate more chill vibe.

Petit Trois Aspen is a new French bistro located in the lobby of The Mollie hotel in Aspen. The restaurant offers a cozy and pleasant atmosphere, with great service from the friendly staff. The food is excellent, with classic French dishes like Bibb lettuce salad, escargot, and French onion soup receiving high praise. The Steak au poivre and lobster spaghetti are also notable menu items, though the steak could use fewer whole peppercorns. The fries, while good, could be more authentically French in style. The wine list is excellent, and the overall experience is described as a true French bistro feel. Petit Trois Aspen is a welcome addition to Aspen's dining scene, offering a delightful taste of France in the heart of the Rocky Mountains.
