Their handroll are phenomenal!!! The crispy nori sheets, warm rice and delicious fresh seafood.
I particularly love the spicy scallops and blue carb hand rolls, and from the premium selection, the yellowtail is mouthwatering.
We moved from LA and missed the wide variety of handroll offering, so we are delighted to have found a spot near us that has such a delicious menu.

Cherry Hills Sushi Co. offers an excellent menu focusing on top-notch sashimi and rolls. The handrolls are fresh and delicious, with a variety of house sauces worth trying. The staff is kind and provides prompt service, with a great selection of wine, beer, sake, and whisky. The intimate setting makes for a cozy dining experience, perfect for those with gluten and veggie dietary restrictions.
The restaurant is small with mostly counter spots and a few tables. The servers are helpful, and the quality of the seaweed, rice, and fish/ingredients is top-notch. The miso soup is flavorful, and the Japanese beers are a unique offering. While it is an expensive experience, it is very much worth it.
Vegetarian options are available for the rolls, and the menu, though limited, focuses on quality over quantity. The staff's passion for their work is evident, and the overall experience is a great way to satisfy a sushi craving at a reasonable price.
