I’ve been coming to Watercourse for years, often making the two-hour drive from Cheyenne just to eat here. After today’s visit, though, I’m not sure we’ll be back. The restaurant has shifted to a server-less model: you seat yourself, order via a QR code, get your own water, walk to the bar for drinks, retrieve your own silverware, and are still expected to bus your own table.
