“Chulo Cuisine of Nepal & India Appetizer ordered: Momocha (6 pcs) (Chicken): Nepalese-style steamed dumplings served with tomato chutney. Entrees Ordered: Lamb Rogan Josh: Lamb cooked in homemade curry sauce, yogurt, garam, masala, ginger/garlic herbs, and spices. Lamb Kebab: Baked lamb cubes in-house spice, baked. Garlic and Butter Naan ordered Drinks: Chai Soft drink Review: This place has been open for a month. The staff is very friendly and the ambiance is great. Quiet, tv's showing the Nepalase landscape in high resolution video and the seating is comfortable. Nice cutlery and just gives the small place an upscale feel.. No chili's or fast casual vibe here at all. This is a throwback to dining the way it was. Started with complimentary Papadum bread served with 6 different sauces. Everything from mango chutney to mint to pickle to chili to sesame seed sauce. Very good. The momocha chicken dumplings were very tasty. We chose the chicken but they also have a veggie option. The sesame sauce pairs well with this and the flavors are amazing. A little touch of back end spice heat... perfect. The 2 lamb dishes could not have been any more different in flavor and presentation. Lamb Rogan Josh (ordered medium) with the mix of their regional garam, yogurt and masala was tasty.. and those kabobs came with their own unique sauce. The kabobs (ordered medium) were served over a bed of grilled onions and green peppers and served with a fresh side salad. White rice was served with the entrees. The Naan is typical Nepalese. The native crispness is there but this particular bread had a soft edge to it. Very good. They bring you your own vat of water for refills and they were fairly attentive and very cordial and helpful with boxes toward the end of the meal. A slight criticism and really the only one is that the kabobs were a little over cooked for my taste but were still amazing. They also have goat on their menu and that's next on the list. Overall this is a welcome and much needed addition to the Fort Collins food scene. Give them a try.. trust me.. its worth it..... and the pricing is very reasonable for this type of food. The best food we have had in this category locally and we have been eating in Fort Collins for 31 years. They are open 7 days a week: 11:00 - 9 Monday- Friday 11:30 - 9 Saturday & Sunday. “My family and I just discovered this place a few days ago and I have been craving their chai & biscuit ice cream since! We loved it and the staff was super kind and friendly, especially with my young, extremely indecisive 6yo who took a long time deciding on what ice cream he wanted. We totally will be back and absolutely recommend 👏“

“If you are in NoCo and want delicious Indian food, come here! The prices are beyond reasonable especially for how HUGE the portions are! The staff is friendly, our food arrived quickly and was hot & fresh, and the restaurant itself was extremely clean, with an inviting atmosphere. They have indoor and outdoor dining, and a ton of vegan & vegetarian options if that’s what you prefer :) we will definitely be back to try the lamb & goat next time!“

“Food rated on an absolute scale ranges from 7.0-7.6. But relative to the price the food can be given an 8.6 since there is good variety and all the food is decent. Lots of veggie options along with chicken, the tandoori chicken being my favorite(7.6), followed by potato samosa (7.5), and saag(7.4). Price is extremely good, would come again“

“New restaurant review: Who: Indigo Where: 144 N Mason St UNIT 8, Fort Collins, CO 80524 ( underneath the parking garage at the intersection of Laporte & Mason) About them: This is a brand new upscale Indian cuisine concept that has been open since July 4th 2025. The Feed.... Main items ordered: Signature Grilled Indigo Lobster - fresh tail Grilled with garlic and herbs served with drawn butter, rice and a small Julianne style fresh vegetable slaw. Goat Chettina - slow cooked meat in a chettina style black pepper with coconut curry. Palak Paneer - Cottage cheese cubes in a very smooth spinach sauce Bread: Garlic Naan Rosemary Naan Drinks: Spicy Mango Mule (Mocktail) Coke Dessert: Rose Rosmalai - soft sleeve dumplings soaked in fragrant rose scented saffron milk. The Experience: We had walked by this place waiting for it to open for weeks and were happy to see people eating there this weekend so we gave it a try. We were greeted by one of the owners and sat at a corner table of our choosing. As we looked over the menu we spoke with Nishant about some of the items on the menu as well as the overall idea behind this concept. He told us that their goal was to open up a space that was unlike any other In town with an emphasis on food quality, execution and attention to detail. Our drinks were served and I will see it took a little more time than normal to get them but not the end of the world.. The star of the show was the food. Where to start.... The lobster dish not only was plated well but the flavors on the tails were amazing. Grilled perfectly and the protein was not rubbery so they know how to cook this. The goat Chettina was well presented with my only criticism being that I had to navigate some very big and small bones but the meat was very tender and well flavored. The sauces are unique to each dish as as anyone who has been to Indian restaurants will tell you... alot of the times this is not the case.. They build these flavor profiles separately and each stands alone as its own unique dish which makes this place different. The Palek Paneer hands down is the best representation of this type of dish I have ever had. The freshness of the cheese is one thing but the silky smooth finish of the spinach... WOW... My big complaint about this dish at the places I have been is that the cheese gets granular with a sandy type finish. Not here. This was fresh, smooth and just melted in your mouth with each bite.. when you add the extra flavor texture of the spinach to this its a home run. The Naan's were thinner than I am used to but very good just different.. The fresh Rosemary was just incredible. That hit your nose as soon as they brought the food out. Freshly cut too. The Rose Rosmalai was just great and something we had never tried before and to say it continues the theme of uniqueness that we found at this restaurant would be an understatement. The cheese dumplings were great but the rose forward smell and the saffron milk together just made for a perfect flavor explosion... what a great way to end the meal. Overall Impressions: They are new, they are young and they are here to prove that you can be unique in this space which is difficult but not impossible. Everything we had here was different than anything we have had at other Indian restaurants so as long as they continue this level of execution the people will come.. they are going to be successful. Their food preparation and quality are already at a very high level. They are meeting the moment and a few small things aside this is as close to culinary perfection as one can get. As a resprentation of several parts of India I would say they know their food and their menu reflects this so there is something here for everyone. You will do well and this is a welcomed and unique addition to the Fort Collins food scene. Indigo is definitely a 1 of 1 Happy eating !“
