El Charro is a local place in Pueblo, CO, close to the mill. It's a great road trip stop for breakfast. The staff here really set this place apart and are super friendly. The food is amazing, made with love, and has incredible flavor. Favorites include the smothered burger with green chili and fries, and breakfast options with crispy bacon and shredded hashbrowns. The quesadillas are a good order. The sauces are amazing, and the green sauce has just the right heat. Outstanding service and great food! Everything they ate was great. The red sauce on the huevos rancheros were of a unique NM flavor.
