Raphael's Bakery is the absolute best! I was in town from NorCal and I stopped by to meet a friend in Greenwich. I had some time to kill so I started asking Charlotte about why my homemade sourdough bread wasn't successful. She called Raphael over who, while he didn't share his secret receipe, he helped me understand the reasons why my bread wasn't full of air and getting any "oven lift."
