Both are frozen emulsions of fat, water, and air stabilized by proteins and sugars, but the ratios and techniques used to create them yield distinct textures and flavor profiles.
Ice cream typically contains a higher fat content—often between 10–16%—due to the use of heavy cream. This elevated fat level contributes to a richer mouthfeel and acts as a barrier to flavor release, which is why ice cream often requires more intense flavoring. Additionally, ice cream is churned at higher speeds, incorporating more air (known as overrun), which can reach up to 100%. This results in a lighter, fluffier texture but dilutes flavor intensity.
Gelato, by contrast, uses more milk than cream, resulting in a fat content closer to 4–8%. This lower fat matrix allows for more immediate flavor perception. Gelato is churned more slowly, incorporating less air—typically 20–30% overrun—which gives it a denser, silkier texture. It’s also served at slightly warmer temperatures than ice cream, reducing firmness and enhancing flavor volatility.
From a colloidal chemistry perspective, the differences in fat globule dispersion, air cell size, and freezing point depression all contribute to the sensory divergence between these two frozen desserts.“

“MOTW has the best chai in the city. I love the soft, creamy, silky texture of their Yemeni chai. I love the way they decorated the 38th st location, very inclusive and powerful pictures. Great spot to get some work or reading done. Also love their prayer or meditation area. It’s such a wonderful coffee shop. Usually Raadia is there when we go and she’s such a kind and friendly soul, always so helpful and customer focused.“

“Best double cheeseburger with bacon, hands down. Absolute monster, and cooked perfect every time. The lobster roll is gigantic. Perfect Mayo. Chopped celery. Toasted roll. Ton of lobster. What it should be. And the ice cream. It's all great, but their pistachio is the best you will find. I'm the warmer months, they have the cruise nights. Every Friday night, the coolest cars, music, raffles, and trivia. If you go once, you'll go again. Awesome place“
“Tony from Juniper Farms Ice Cream came to our house yesterday. We had a first communion party for my grandson. We surprised him with the Ice Cream truck. Really bad location so I recommend just stopping in the grab ice cream. I wouldn't eat on site. It's right next to the waste treatment plant. Most of the time it's no big deal, but sometimes the smell is really bad.“

“February 6, 2025. What’s seemed like any other day in the life of an average-joe such as myself. What I did not expect, however, was my mind to be busted all over…
I visited the creamery expecting it to taste like any other, yet that is not how it turned out. The cream produced here, specifically by a fellow named Sid, in my case, was particularly excellent.
Regardless of your cream preferences, I simply cannot recommend this location’s enough. The cream here will just absolutely blow your mind.
My life is forever changed after visiting this location, and I’ll be chasing another cream experience of this magnitude for the rest of my life.

“We went for Easter with a 2yo and a 6yo and had a good time. The kids were happy and so the adults. As other people commented is not really an egg hunt, because the eggs and colorful ball are all around the garden. But I knew it before going and explained the kids in advance so they weren’t disappointed. You fill the basket with eggs and need to return to exchange for a goodie bag with some candy, Easter chocolates and coloring sheet, stickers, a ring, balloon and a few more things. Not much but really enough. Plus can have an ice cream sandwich! The place is really nice, and there were a few activities to do outdoors plus an indoor room with plenty of toys and bouncy castle. It was overall a fun and lovely experience.“
