Had a phenomenal meal last night. Pristine oysters, tender and tasty calamari, brocollini as tender as can be, grilled yellow zucchini, crispy artichokes, skinny fries, Peruvian chicken, tomato tartar . . . all world-class in taste, ingredients, presentation, and portions. the desert was beyond amazing. Of course our bartender, Charles, was stellar!
My experience at Vermilion was excellent from start to finish. I started with the steak tartare, which was fresh, flavorful, and a great way to begin the meal.
For my main course, I had the Prime 850 Bone-In Ribeye, thick cut, and it was unbelievable. The steak was juicy, tender, moist, and perfectly seasoned. Every bite was full of flavor.

Vermilion is a charming restaurant known for its great atmosphere and friendly, helpful staff. Diners consistently praise the excellent food, from casual burgers at the bar to special occasion steaks and holiday brunches. The Prime Rib and Veal Chop Parm are standout dishes, while the Chicken with gnocchi and beans boasts an unbelievably delicious flavor. The wedge salad is fresh and crispy, complemented by a tangy Gorgonzola dressing, and the perfectly crispy shoestring fries come with a variety of tasty dips.
The restaurant also features impressive decor, including a stunning Chihuly sculpture. The service is often highlighted, with attentive servers like Marco providing excellent suggestions and ensuring a relaxing dining experience. Although some guests have noted that certain staff members wear strong cologne, the overall hospitality and care from the team are commendable.
However, there have been occasional disappointments, such as missed anniversary acknowledgments or complimentary desserts. Despite these minor issues, diners leave feeling well taken care of, thanks to the polite management and the superb culinary skills of head chef Eduardo, who creates unforgettable dining experiences with extraordinary appetizers and attentive service.
