“Sassafras is one of the best restaurants I have had the pleasure of enjoying. Owner/chef Paul Edward brings his memories and discoveries about food and life in the Chesapeake to the table. Using products sourced locally from the chef’s garden to farms in Maryland, Pennsylvania, and West Virginia, the unique combinations of flavor and texture make the meal a delicious experience. A 12-course tasting menu highlights caviar from Mississippi sturgeon, Eastern Neck oysters, and fresh produce from across the regions. You will find the menu changes often. The wine pairing is outstanding (says my wife); however, the non-alcoholic selections are treats unto themselves, designed to bring out the flavors of the food. Paul Edward makes the evening enjoyable in the close dining environment for eight as he explains his preparations and why he chose them. Sassafras is on the level of, or exceeds, De Kaas in Amsterdam, which carries a Michelin star. We will dine at Sassafras again.“
