The noodle soup was so flavorful and was perfect! I had the signature dish Lanzhou Beef Noodle Soup with thin noodles. The noodles are hand pulled and made fresh every day and you can tell by the excellent texture and flavor! My new favorite restaurant! Also we were honored by four songs excellently played on the baby grand piano. Thank you for a delightful dinner, perfect service, and inviting atmosphere. The decoration and background music of this restaurant is really unique. There are different instruments hung on the wall. The servers are friendly. I would recommend getting the tomato roast beef noodle soup with wide noodles if you like a tomato base. Really enjoyed the meal, very fulfilling and flavorful.
All the noodle dishes were very good here and each had a very large portion size for a very reasonable price. The cumin lamb stir fry hand pulled noodle was my favorite. It was much spicier than I thought it would be.
I felt like the pickled radish when I ate it at the restaurant still had a raw radish taste and maybe was not pickled for long enough. However, after eating the leftovers the second day, the pickling process seemed to be complete and it was very good.

Chopin Noodle House肖邦拉面馆 (Gaithersburg) is a casual restaurant with a grand piano inside. The food is fresh made and delicious, with some of the best hand pulled noodles in Maryland. The portion is quite generous. The broth and meat are super flavorful and tender. The beef slices are very fresh and nice-chewy, and the soup is also tasty. Specific meals include the A3 Sauerkraut Beef Noodle Soup with Knife Sliced noodles, vegetable noodle soup, traditional beef noodle soup, oil spilled noodles, and the Special Tea. The liang pi and cucumber side dishes are also very good. The place is comfortable and easy for families. Customers can watch the chef create the noodles. The interior is relaxing and kept pretty clean. There are plenty of seats, but the place is a little bit small. During busy hours the wait time can be around 30 minutes, with the line out the door. The staff is nice, friendly, and helpful, though they are very short of staff. Service is great. The food will take awhile since it's hand made, but it's worth the wait.
