I tried the Tonkotsu ramen and it was one of the best I had in authenticity in the Triangle. The subtle umami of the broth definitely was not using MSG, but only could be made by a traditional 14 hour plus cook to create it.. for me this was a very authentic traditional broth that has a very balanced delicious flavor profile.
