SUCHNESS dining room Reviews
The food and the staff are so consisently great - thank you. The best restaurant in Taos by a long way!
Suchness was so great! We were greeted warmly when we walked in and offered the option to sit outside or inside. We sat outside in the enclosed area. Our server was warm and funny and kind enough to advise us that the two appetizers we picked to start with were going to be a lot of food. We decided just to have one, the mushrooms and ramps on toasted bread. It was absolutely delicious. Then we had the vegan rigatoni bolognese. Wonderful experience. The food was amazing. Weeks later I am still thinking of the appetizer of octopus and my main meal of cod! My partner had steak and it too was delicious. We had the craft cocktails which were delightful and a nice compliment to our meal. We sat outside on a nice cool evening. The atmosphere was relaxing and calm. The service was friendly and punctual. We will be back!

Suchness Dining Room is a restaurant that offers an exceptional dining experience. Located in Taos, it is a must-try and may be one of the most underrated dining experiences in the area. The restaurant is currently waiting for its wine and liquor license, but this should not deter potential diners.
The depth of flavor in each dish is hard to describe, with many reviewers praising the nuanced and pleasurable food experience. The portions are generous, and the service is top-notch, with a very lovely and accommodating staff. The vibe of the restaurant is comforting yet sexy, with nice lighting, cool black flatware, and dried floral arrangements. The small menu features dishes that are done really well, and everything is crafted with knowledge of ingredients and food. The creative cuisine is beautifully prepared, with multiple vegan options that are as delicious as the non-vegan dishes. The menu includes an excellent house-made vegan kimchi and pickled vegetables, and the vegan pasta is noteworthy for its depth of flavor.
Recent reviews highlight dishes like the tiradero, which was fantastic, with perfectly sliced hamachi and crunchy corn nuts adding a salty finishing touch. The mains included light and flavorful rigatoni and tender, flavorful pork belly, served with pureed black-eyed peas and greens, which was described as incredible. Dessert lovers will be pleased with the Hawaiian butter mochi cake, a light, flavorful, and not-too-sweet treat that is highly recommended. The restaurant also offers a carefully curated wine list, an excellent non-alcoholic mixed drink like the juniper spritz made with club soda instead of tonic, and the option to customize drinks, such as adding kimchi as a side.
Overall, Suchness Dining Room is a truly special place. The layering of flavors, originality of dishes, generous portions, and excellent service create a memorable dining experience. Its intimate but lively setting and sexy vibe make it a spot that diners will want to return to.
