Kabuto Edomae Sushi offers some of the nicest sushi in a good while, with excellent service and excellent preparation. The omakase is high quality with unexpectedly generous portions, rich in flavor, and beautifully varied textures. Some guests highly recommend the thornyhead, giant clam, shad, and mackerel as a nice departure from common white fishes. The Hokkaido uni is incredibly fresh, sweet, creamy, and perfectly balanced. The Kabuto signature menu for $185pp features top notch seafood. The appetizer trio is the most interesting part, with good contrast of fresh perilla and buttery salmon. The warm dish is a highlight in presentation, and the grill dish has the best eel ever had. The sushi is elegant in its simplicity and minimalism, though some pieces had more wasabi overpowering the fish and others had less soy sauce. The full experience ran just an hour, leaving some feeling slightly rushed. The sake pairings are perfect, service is exceptional, and the food is a work of art in presentation and flavor. It is definitely expensive but an unforgettable experience.
