Solinsky's is a true craft of a salumeria producing world-class cured meats and barbecue brisket. Only open on the weekends, the owners are a couple who make everything themselves using local ingredients. Their selection changes slightly week to week and ranges from bacon, to prosciutto cotto, capocollo, kielbasa, and my newfound favorite, kabanosy. This is a very special place and a true labor of love. You cannot find better brisket on the East Coast. That alone is a reason to make the drive (even a very long drive), but you will also find an extraordinary assortment of charcuterie (all made in house), as well as local cheeses, pickles, olives, anchovies, etc. Solinsky's has a devoted following and while I do not live in the area, an annual pilgrimage is pretty much the apex of my culinary year.
