“I am a connoisseur of home fries on a quest to find the *perfect* home fry. I've invested countless hours in experimenting; tried different cooking implements and oils; kept a log of various cut sizes, parboiling times, frying methods and the resulting variations in exterior crunch and interior softness; adjusted the spices used and the proportions of each. I've sampled home fries from humble diners and upscale restaurants in 5 different provinces and 3 states searching for inspiration for my next fry up. My quest ended here, at the Only. Their home fries are tender but not mushy; the crunch is satisfying; the spice mix is truly exquisite and clearly thought through in order to maximize the interaction between potato and oil. The way that the rosemary clung to the potato and became crispy without burning is an indication that their cook is a true master at the skillet.
My only regret is that I neglected to get a seat at the bar so that I could watch and learn.“
