Grabbed a late lunch here on a rainy Tuesday around 2pm and the place was still humming, which told me everything I needed to know. The cacio e pepe was made tableside and the pasta had that proper chew to it, not mushy like so many places serving it these days. Staff clearly knew the menu inside out, walked me through a wine pairing without being pushy about upselling. The tasting menu we grabbed at the bar around 8pm hit every note, especially the cacio e pepe that our server talked us into ordering off-menu.
