Because this Longo's is a high traffic location, the turnaround at the sushi counter is fast. You aren't getting rolls that have been sitting under a heat lamp or in a fridge for six hours, the rice is still soft, and the fish has that bright, clean flavour. The individual behind the counter is meticulous. You can actually watch her prep the rolls, which adds a layer of transparency and confidence in the food safety standards.“
