High quality sushi, probably better than whatever brick and mortar spot you frequent. Rolls are good, but prioritize the ngiri. The fish quality is excellent and the cuts are huge. Order a Rainier at the bar and pretend it's a Sapporo. This place is a gem.
I absolutely love the quality of sushi here, I recently moved to Bend from Portland and I would consider myself quite picky on sushi quality as I enjoy sashimi/nigiri and have been to many places for exactly that, in other states as well. Worth the wait. You know it is good when it is the only truck with a consistent line! Sushi was fresh and wide variety of creative roll options, sashimi, bowls and apps.

Based on reviews, Maki Maki Sushi | Food Truck is a great little food cart offering the best sushi in Bend and Central Oregon. The fish is consistently fresh, with simple flavors and wonderful roll combos. Highly recommended meals include the Volcano roll, spicy tuna roll, tempura salmon roll, gyoza, crab rangoons, poke bowls, and California rolls. The service is friendly and quick, with some gluten free options including tamari. Beware the wasabi, it is super hot. The workers are locked into their craft, and the only good poké in Central Oregon features actual fresh fish and the most creamy avocado.
