I spend roughly 150 nights a year in hotels, so it takes quite a bit to genuinely impress me. The Westin Hilton Head managed it.
Chef Mark at the Carolina Room is the first person, other than me, to cook a filet exactly the way I like it: rare blue. Not “rare-ish.” Not “we were afraid to serve it that way.” Actually rare blue. It was exceptional.

we purchased the carolina room breakfast buffet with our westin stay. Paid 30$ per person extra per day. It is a good breakfast, though hard to argue it’s worth 30$ a person, the person who seats the guests seemed like someone who did not want to be working.
We celebrated my Dad's birthday as guests at the hotel! Our server was delightful. Not a great selection but my Snapper was great! Would recommend
