Southwest Bistro (SWB) in the Hyatt Regency is a commendable dining option, especially for a hotel venue. The lunch buffet and salad options are particularly impressive. Service from Alyssa and Jeremy contributed to a pleasant dining experience during two separate visits. Although food took some time to come out of the kitchen due to the busy event, it was worth the wait. The bar serves excellent drinks and "Rich Texan" martini, and the chips and queso are above average. Burgers are also reported to be excellent.
