Really like the chicken salad and pecan bread. However tonight we rolled in at 7:25 (close at 8). Employees didn’t seem happy about another customer so close to closing time. Couldn’t buy a sandwich but had to get something out of cooler already made up which was fine. Sorry to leave less than a 5 star review, but we were not made to feel welcome.
We made our usual stop at our favorite location Hwy 45 Collin's St Bakery on Sept 11, 2025. It's hard to pick a favorite cookie because I love them all. Fruitcakes are my husbands favorite. We purchased the Strawberry Fudge Cake. I have to say it's delicious. The service here is incredible. The ladies and young men are the nicest and food is great. Now here is the downside. Went to Collin Street Bakery in Waco for first time today and wow we were amazed at the quality, size , value of the food and deserts . Janet B. And Daisy were so super helpful and offered us free samples of any cookies we wanted as well as some History of the Bakery. We were very impressed overall with entire experience. I highly recommend everyone try this place.
A++++++ 5 Star rating for them from us . We will be back soon.

Collin Street Bakery - I-45 Corsicana is famous for their fruitcake, which lives up to the hype. The baked goods are fresh, rich, and absolutely delicious. Every cookie was fresh, flavorful, and clearly made with care; the cookies were soft and delicious. The sandwiches were fresh tasting and just filling enough. The bacon egg croissant was very tasty with a thinner flaky and crunch croissant. The jalapeño cheese rolls were very tasty and not too spicy, and froze really well. The pecan cake had poor taste, and the pecan on the topping was bad and smelled old. The staff was super friendly, and service was quick. The overall atmosphere felt warm and welcoming. One staff member went above and beyond to help a customer who tripped. The owners are super friendly. The location is just off 45, convenient, with a restaurant inside and a counter filled with pastries and savory treats. There is also a small area to buy breads, rolls, and pies. It is a must visit place for everyone.
