They don't make enough bagels for the day and instead of selling out they would rather hold on to their meager inventory at the end of the day to customers that may or may not show up.

I'm a former New Yorker, and it doesn't get more authentic than this. I live in Rowlett, but it's still worth the hour round trip drive to pick up a fresh batch for now and a frozen bag for later. It gets mobbed around 10:00 a.m. on weekends, so prepare yourself, or order ahead. It is worth it!
