Desde el momento en que probé su nueva creación —empanadas de chicharrón en salsa verde, acompañadas de chimichurri y una salsa verde perfectamente picante— supe que esta noche iba a ser memorable. El equilibrio entre tradición y audacia es un sello evidente del Chef Rafael, quien eleva cada platillo a una obra de arte, demostrando una pasión culinaria que se saborea con cada bocado. La mezcalita de jamaica refrescó con un toque floral y misterioso, mientras que la ensalada de betabel, que en otros tiempos hubiera evitado, sorprendió por su elegancia y el juego armónico de ingredientes.
