They use olive oil, butter, and ghee. I called multiple Indian restaurants locally, and they were the only ones who don't use cheap oil - soybean oil. It makes a difference with taste as well, the food was phenomenal and flavorful. The quality of the food here is really high, and it was such a treat to be able to order anything and have sea food options like calamari!
