Market One Cafe was literally the highlight of my time at The Hyatt Manchester. We have stayed at Hyatt numerous times over the last 20 years and have seen the hotel add the second tower, turn over numerous restaurants, and make many other changes. They added the "Market One Cafe" to the lobby a few years ago.
