“I am an Asian man born and raised in Houston, TX with a huge Vietnamese community. So TLDR, it's been difficult finding a good Vietnamese restaurant that makes a really nice bowl of pho.

Ordered Vietnamese egg rolls and steamed pork dumplings to start. They tasted fresh and well made. We then had pho (rare brisket and tendon). The prices for the meal was on par if not slightly cheaper than some of the other viet restaurants we've visited in COS.

The Pho was perfectly prepared. Noodles were all long (unbroken and not over cooked). The rice noodles had just the right amount of tooth and didn't break when getting a big bite. The broth was the star of the show. You can taste all the nuance in their preparation. There was subtle sweetness and a touch of citrus and complexity from the herbs cooked in the broth. The broth was cleaned and clarified giving it a clear rich color. The taste was perfectly balanced and clean tasting. It wasn't oily and fatty and the most important - it wasn't watered down or bland.

Service was excellent and attentive. I would have liked our table to have been pre-bussed a bit (like taking our appetizer plates away after we were done) but it wasn't a big deal.

Portion sizes were also huge. Wife ordered a small and I ordered a medium and we barely were able to eat half of the noodles they gave us. I would recommend sharing if possible or ask for less noodles in your soup. The broth is the star of the show anyways.

We will be back again. I want to try their rice plates (my other vietnamese staple entree) and I will report back on how it is. Will it be crushed rice (it's so rare to see nowadays).“
