Amaterasu is a highly regarded sushi restaurant in the heart of Oahu, known for its incredible omakase experience crafted by an expert Japanese sushi chef. The restaurant offers a 15-course meal featuring high-quality, fresh fish imported from Japan. Diners enjoy a wide variety of dishes, including king salmon, shima-aji, deep sea bass, Japanese sardine, flounder with shiso, Mehikari tempura, chawanmushi with ikura, uni nigiri, hotate, toro, tsuke-maguro, Kaua‘i shrimp with garlic uni butter, and a temaki with chopped toro and pickled radish. Each piece of fish is expertly cut, melt-in-your-mouth tender, and free of stringiness, showcasing the chef’s skill. The seafood is complemented by thoughtful preparations, such as the crispy Mehikari fried whole, and flavorful additions like garlic uni butter on Kaua‘i shrimp. The chawanmushi is smooth and well-balanced, and the uni is of top grade—sweet, savory, and fresh despite the shipping distance from Japan. The signature Kaua‘i shrimp topped with uni garlic butter is a highlight, often compared to lobster in taste. The restaurant’s ambiance is relaxed and intimate, with friendly service from Chef Hide and staff members who create a welcoming atmosphere. The presentation of each course is beautiful, with plates and bowls carefully chosen to enhance the dining experience. While the lack of an inside bathroom is a minor inconvenience, the overall experience is memorable and reasonably priced considering the quality. Many diners find themselves wanting to return, as the food, service, and ambiance make for a perfect, enjoyable evening.
