Koiso Sushi Bar is a small, authentic sushi bar known for its fresh and fantastic sushi, made right in front of you by Chef Hiro-san from Japan. The sushi literally melts in your mouth, and the simple, artistic presentation allows the pure taste to shine. The restaurant has only 11 counter seats and a 4-top, with two seatings per night at 6 p.m. and 7:30 p.m., so reservations must be made at least a month in advance, often filling up quickly. There is a strong local clientele, and walk-ins are unlikely to get a seat without a reservation. The menu features many market-priced options such as sashimi, maki, nigiri, and other shellfish, with the chef guiding guests through a delicious omakase experience. The ambiance is very traditional, with no hotel glitz—just simple ingredients prepared in time-honored tradition. A small app and fruit plate are included with dinner, and beer, wine, and sake are available. Service is outstanding, and food is amazing, making it worth the wait. For those short on time, they also offer to-go orders with a minimum of $100, which can be picked up by calling a day in advance. The restaurant is a family affair, with Chef Hiro-san’s wife running front-of-house, creating a warm and authentic atmosphere. Overall, Koiso Sushi Bar is considered one of the best sushi restaurants on Maui and offers a dining experience comparable to top sushi places worldwide.

Excellent and great staff!!love going every year

The omakase was perfection. I never knew there could be so many flavors! Make a reservation now and plan a trip around it.

We found this place completely by accident, and I’m so glad we did! They only open reservations once a month for the following month, but somehow we got incredibly lucky—a cancellation opened up during our trip, and they were able to fit us in - the time was not the best (8pm vs out usual dinner time at 6pm) but I made ourselves wait and no regrets that I did!
