We are just visitors to Waimea and in all my research for our trip we never saw this place mentioned but Taco Rosa should be shouted for the rooftop and on every travel blog. We luckily stumbled across it and glad we did! We have had lots of tacos in our life and these are definitely at the top. So unique and delicious. I love this place so much and was so surprised to find real tacos in Hawai'i! The tortillas are nixtamal and homemade. The carnitas is a gift from the gods. I enjoyed the sambal chicken and the potato taco as well. The Keiki quesadilla I can eat all day, everyday with toasted cheese on the outside and melted cheese on the inside--yum!! It's SF pizza made with sourdough and quite tasty. The crust was good and the dough was thin--I ate my slices cold and still enjoyed them.
