La Casita | Mexican Restaurant is a restaurant in Salina. The place has the BEST enchiladas, where they dip the tortillas in ancho chile sauce before cooking. The food is perfect, tasty, truly wonderful with fresh vegetables and distinct, complex flavors. Everything is made fresh on site. The service is attentive and thoughtful, and the staff is very friendly with a family feel. Portions are large; a Jr. Serving can be shared. However, some food is bland. The chicken fajitas have no flavor and are grisly. The pork smothered sancho also has no flavor. The Chile relentless was just cheese on a piece of pepper, not stuffed and fried. The hot salsa was not hot. One meal was okay, nothing special, needing more flavor like onions, cilantro, and jalapeños. There was an old water leak from the ceiling being fixed during lunch. On a good note, there are lots of Mexican restaurants in Salina as options.
