About Hinoki Counter

Hinoki Counter offers an excellent, enjoyable, and relaxing meal from start to finish. The chef thinks deeply and constantly refines his craft, with a philosophy that “Rice is more important than fish.” This is difficult to achieve, and he has spent a great deal of time experimenting, adjusting, and refining. The meal feels more like a dialogue than a one-way service, as the chef patiently introduces each dish and discusses flavors and impressions, making the experience high-quality and genuinely warm.

The omakase is considered the best for the price in NYC/Long Island. The chef has his own ideology of providing the best value seasonal fishes and veges, with all ingredients complimenting each other without overpowering. Located in Blu Ember, the restaurant is beautiful and trendy, with an ambiance that beats most omakase places. Service is spectacular and amazing, with multiple waiters and an attentive attendant. The chef informs guests of every dish in detail, answers questions, and accommodates dietary restrictions. The omakase tasting menu is thoughtfully crafted, beautifully presented, and bursting with flavor. The atmosphere is intimate and welcoming, perfect for a celebration, though the two dessert courses may not suit everyone. Cocktails are delicious and very strong.

What stayed with me most was something he said: “Rice is more important than fish.”
It sounds simple, but it’s actually very difficult to achieve.

Not everyone can cook rice that truly matches the quality of top-tier ingredients.

Nice place. Started very strong but the Nigri was okay. Overall worth the price if you are in the area.
