I was lucky enough to score a reservation for my husband’s birthday to FSS (the cool way to say it) before they became the best restaurant in the US, per the James Beard Foundation. To say it was phenomenal would be an understatement! I don’t eat peas (texture), I don’t eat beets (taste), and I definitely would never order sweetbreads! I would go back just for the beet ravioli!! Finally made it to FSS! I was appreciative to enjoy it for my birthday celebration! Let’s begin with the Ambiance…The music playlist was BEYOND….Absolute Vibe…I was into it ALL NIGHT! Our waiter was attentive and provided great insight and feedback on each course! The food was NO DOUBT …next level and elevated! Outstanding food and service! Lots of neat flavors and combinations going on. Peers were probably the best I’ve ever had, halibut was rich and delicious, Quaile with Pat today and lime was outstanding, and a great match with fat and acidity, and the skirt steak was very good though the cut wasn’t the same standard as their other courses. The wine list is above average, but lacking age and depth. Allowing outside bottles for $50 solves that problem.
