Just completed a tour of the Central Texas Barbecue Scene. Visited Snow's BBQ-Lexington, Louie Mueller-Taylor, Kreus Market, Smitty's and Black's-Lockhart, The Salt Lick- Driftwood and Franklin's in Austin. It was great seeing the venues and the family history at these historic sites. I visited Franklin's in the past and felt it was the best brisket I had ever eaten in my life. The quality of the barbecue is well documented, but you know what I especially love about eating here? Everybody is just so happy to be at Franklin’s. The other patrons all have stories. Today I ate beside a group of friends from Carolina, and an Indie band from the United Kingdom. Nobody in a hurry. Everybody knows they are in for a treat. If you are going to wait in line for an hour+ to eat, you mind as well be around a bunch of very happy people.

Get to the line at 7am on a Saturday if you want beef ribs. They sell pretty fast.

Franklin Barbecue is an institution of American BBQ, known for its exceptional brisket and smoked turkey. Despite long waits, the food is absolutely delicious and worth it. The brisket is amazing, well seasoned, and moist. The ribs are fall off the bone and tender, while the jalapeño cheddar sausage is a highlight. They are super generous with their portions. The inside area is really clean and organized, and the staff are very friendly, creating a great atmosphere. Waiting in line has a tailgating feel to it. The restaurant has a limited menu of sides like coleslaw and potato salad, which are well-received. The atmosphere is casual and pub-like, but it can feel tight. The restaurant is wheelchair accessible with a ramp and features a small dine-in area along with a pet-friendly patio. Prices can be high, but many agree that the food is worth it. Franklin Barbecue is a must-visit for BBQ enthusiasts looking for top-notch, flavorful meats.
