My wife is Japanese and I lived in Japan for decades. We both think this is place is the closest in the region to what you experience in Japan. The service is also excellent.
It is on the expensive side. But, I think it is definitely worth it. Also, there is a happy hour menu that's considerably cheaper.

SanKai's sushi bar is a favorite in the northwest for its incredible fish. Chef Nakano ensures a great dining experience. The black cod, amaebi, and spider roll were highlights, served with efficient and friendly service. The venue offers authentic Japanese cuisine for a delightful evening with friends. Customers praise the restaurant's quaint and charming downtown location, relaxing atmosphere, and high-quality seafood. The sushi is described as reaching "elite level" with its expertly prepared rice. SanKai is considered a hidden gem in Edmonds, providing an authentic Japanese dining experience worth the slightly higher prices.
Customers have recently highlighted the Omakase menu with Chef Nakano, who made excellent selections for both sashimi and nigiri, including smoked Bonito, Yellow Tail, Fatty Tuna, Amberjack, Mackerel, Scallop, Sweet Shrimp, and Wild Sockeye Salmon. The Sankai roll featuring shrimp tempura, asparagus, avocado, crab, scallop, fish roe, and Japanese mayo was a favorite. Customers also enjoyed the variety of sushi and rolls, as well as the gyoza. While the restaurant is generally consistent, one customer had an unpalatable albacore nigiri on a particular visit.
