If you like pastries - don’t miss this one! We randomly stopped in to check it out, and OMG - we’ve been back twice and will stop every time we pass Idaho Springs. Everything we’ve tried has been incredible, but the cinnamon roll is out of this world. She uses croissant dough and multiple kinds of cinnamon which results in the best cinnamon roll I’ve ever had - and I consider myself to be somewhat of a cinnamon roll snob. Stopped in during an overnight stay to acclimate in Idaho Springs prior to heading up to Keystone. Owner was very welcoming. I tried a Lemon and Cheese Pastry and it was delicious. He offered to warm it and wrap it so that I could eat and walk. Flaky pastry with a rich cheese filling and tangy lemon curd. Highly recommend!
