It comes from the cast iron pots of beans buried in the sand pit, slow-baking to perfection the old-fashioned way over a wood fire. The result? Beans that dreams are made of. A hypnotizing blend of smoky and sweet that makes you want to weep with joy. Pork baked beans elevated to an art form. An homage to the bean gods. They're why people make the pilgrimage off the highway to this little restaurant in the Quebec countryside. I buy them by the tub to take home and savor, to reminisce about that smoky sweetness that haunts my dreams in the off-season when La Binerie is closed.
