“I came across this place totally by accident as I was looking for a place that opens past 9p. I was so surprised to see an authentic Chinese menu and the pork intestine noodle is amongst the best I have ever had. Having lived in several cities with dense Chinese population, I was extremely pleasantly surprised by this gem in Boulder of all places. I will for sure be back to try other dishes.“

“After visiting Vietnam, Boulder Pho’s Spicy Beef Noodle Soup is the only place in Boulder that actually takes me back sitting in the streets of Ho Chi Minh City. “We love king dumpling! We came on a Monday night for my son’s birthday because it’s his favorite. We were treated like family and the food was five stars. We couldn’t stop eating. “We had the absolute best experience at Jai Thai! From the moment we placed our order, Sony was so sweet and welcoming. She made the whole process—from ordering to pickup—such a delight. We tried the Chicken Basil Fried Rice, Chicken Satay, Shrimp Pad Thai, and Mango Sticky Rice, and every single dish was outstanding. The basil fried rice was perfectly seasoned with just the right amount of heat, the chicken satay was tender with a delicious peanut sauce, and the shrimp pad Thai had that perfect balance of savory and sweet. To top it all off, the mango sticky rice was fresh, creamy, and the perfect way to end the meal. The food was flavorful, fresh, and clearly made with care. “Boulder Pho in Longmont was an incredible dinner stop and one of the most enjoyable meals we had during our visit. Service was quick, friendly, and efficient, allowing us to settle in and enjoy the food without a long wait.

What We Tried:

• Rare Steak & Beef Ball Pho – This was the standout dish of the evening. The broth was rich and flavorful, not watered down like some pho can be. It had a wonderful depth of flavor with just the right balance of warmth and seasoning, making each spoonful feel like a comforting hug. The fresh Thai basil added a bright, aromatic element that elevated the entire bowl. Even the small size was a generous portion—more than I could finish.

• Cashew Chicken – Beautifully presented and generously portioned. The vegetables retained a nice crunch, and the dish had a clean, balanced flavor that allowed the ingredients to shine without becoming overly heavy or salty.

• Lavender Boba Tea – Refreshing and unique. The lavender flavor was prominent without tasting perfumy, and the sweetness was restrained, allowing the floral notes to come through. Served ice cold, it was the perfect complement to the meal.

From the quality of the ingredients to the thoughtful preparation, every item we tried was enjoyable.

Would I return? Absolutely. There were several other dishes on the menu that caught my eye, and I would gladly come back to explore more of what Boulder Pho has to offer.“
